One good thing about living in the same place forever is growing relationships with neighbors that share.  Gigi got this recipe from a neighbor many years ago.  Not only is it light for a casserole, but it is also extra beautiful because of red pimentos and green parsley.  I guess she should save it for Christmas?

 

    Ingredients
    • 2 4.3-ounce boxes Rice-A-Roni Long Grain & Wild Rice, cooked
    • ½ cup onion, chopped
    • 2 10.5-ounce cream of chicken soup
    • 1 6-ounce package of sliced mushrooms
    • 4 cooked chicken breasts, diced
    • ¼ cup jarred pimento, diced
    • 2 tablespoons parsley, minced
    • 1 teaspoon salt
    • ¼ teaspoon pepper
    • ½ cup slivered almonds

     

    Instructions
    • Preheat oven to 350 degrees Fahrenheit.
    • Mix ingredients, except for the almonds.
    • Grease a 9×13 baking dish.
    • Put in prepared dish, then top with the almonds.
    • Bake at 350 degrees for 25-30 minutes.
