Aunt Alisa is the one that gifted us with her Asian fried rice recipe made with carrots, peas, chicken, and even bacon.  When we do Cajun food for the whole family, she often brings dirty rice, but this last time, she adapted her fried rice recipe to make this jewel.  We all enjoyed it, especially the Opa’s Smoked Meat made in Fredericksburg, TX.

Due to the size of this dish, Aunt Alisa usually uses an electric skillet, but you can use what works best for you.

  • Cut bacon into small pieces and sauté in an electric skillet until brown. Set aside.
  • In same pan, sauté carrots, onion, and bell pepper until tender. Set aside.
  • Sauté shrimp in butter and ½ teaspoon Cajun seasoning. Set aside.
  • Slice the sausage. Cook until browned on each side. Set aside.
  • Over high heat, add oil to skillet, and sauté rice for 1-2 minutes.
  • Stir in Cajun seasoning to taste.
  • Stir all ingredients into rice.
  • Add peas. Sauté 1-2 more minutes.
