We all know that Uncle Bear was raised as the baby child, and as a result has learned to get his way with flattery.  Recently Michaela was his main target.  Weeks in advance of his birthday, he began to subtly and lovingly remind her that his birthday was approaching and that he liked apples in his desserts.  This was her gift to him.  (The salted caramel is delicious on apple fritters.)
Ingredients

Apple Pie Filling

  • 2 tablespoons unsalted butter
  • 3 gala apples sliced and peeled
  • ¼ cup brown sugar
  • 1 tablespoon cornstarch
  • ½ teaspoon cinnamon

Salted Caramel

  • ½ cup sugar
  • 2 tablespoons unsalted butter, softened
  • ¼ cup cream
  • ½ teaspoon salt
  • ½ teaspoon vanilla

Cinnamon Cookies

  • 3¼ cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon cornstarch
  • 1 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • ½ cup sugar
  • 1 teaspoon vanilla
  • 2 large eggs

 

 

Instructions

Apple Pie Filling

  • In a medium saucepan, melt the butter. Add the remaining ingredients for the filling.
  • Heat while stirring.
  • Once it starts bubbling, cook for a few more minutes until it thickens and the apples become soft.
  • Let cool.

Salted Caramel

  • In less than 30 seconds, you’ll melt the sugar over medium heat. Remove from heat immediately.
  • Add 1 tablespoon of butter and whisk until melted. Add the remaining tablespoon and whisk again.
  • Add half the cream and whisk, then add the remaining cream and stir.
  • Add the vanilla and salt.
  • Let cool.

Cinnamon Cookies

  • Mix your dry ingredients: flour, baking powder, cinnamon, cornstarch, and salt.
  • In another bowl, combine the softened butter, brown sugar, sugar, vanilla, and eggs and mix until smooth.
  • Combine dry and wet ingredients. Mix until well combined.
  • Preheat oven to 350 degrees Fahrenheit.
  • Using a large scoop, make six cookie dough balls per cookie sheet.
  • Once evenly spaced, use the bottom of a measuring cup or jelly jar to press circles into the middle of each dough ball.
  • Using your hand, make sure each dough ball is now a flat circle (with an indentation).
  • Bake for 11 minutes. Take out of the oven and repress the center circle.  Bake for an additional 1-3 minutes until the cookies are done.
  • Fill each center with apple pie filling then drizzle with salted caramel.
