Nana loves indulging those she loves with food, so when Pa was diagnosed with diabetes, she began to get more creative with her sweet indulgences.  When Pa has a craving for something sweet, this is a frequently used recipe.  Nana and the kids share a bowl as well.

 

Ingredients
  • 5-ounce box of sugar free vanilla pudding
  • 2 cups 2% milk
  • 8-ounce carton of Cool Whip Sugar Free
  • 7 ounces of sugar free shortbread cookies
  • 2 to 3 bananas

 

Instructions
  • Mix pudding with milk using a wire whisk. Stir until pudding is smooth and thick.
  • Fold Cool Whip into pudding.
  • Layer cookies in bottom of a 9×9 dish.
  • Top the cookies with half of the sliced bananas.
  • Cover the bananas with half of the pudding.
  • Repeat the layers, then chill.
