Nana enjoys cooking blackeyes from our garden, and she wanted to share her most used recipe. These peas are eaten throughout the year, and we get to enjoy the fruits of our summer labor in the hot Texas sun.  She often gets out the Cowboy Candy when serving blackeyes so that we can add a dollop to our bowl.  Have fun cooking with your family. Ingredients
  • 2-3 cups of freshly shelled blackeyes
  • 1 strip of bacon
  • 1 can chicken broth
  • 2 tsp sugar
  • salt and pepper to taste

 

Instructions
  • Put all ingredients in a traditional pressure cooker or an electric one (i.e. Instant Pot).
  • Pressure for 2 minutes, then quick release the pressure.
  • After cooking, fine tune your seasoning by tasting.

This recipe doubles well if needed.
