As much as Nana loves to cook, she enjoys her kitchen even more when she is surrounded by her grandkids.  Through trial and error, she has discovered that Michaela enjoys making cookies.  There is something about watching each batch to make sure it is perfectly cooked that Michaela enjoys.  They wanted to share one of her successful recipes, a traditional sugar cookie with a slight twist.  Check out Nana’s pumpkin oatmeal cookie recipe for another delicious treat.

 

Ingredients
  • 1 cup butter (2 sticks)
  • 1 ½ cups sugar
  • 3 tablespoons lemon zest
  • 2 tablespoons lemon juice
  • 1 large egg
  • 3 cups flour
  • ¼ teaspoon salt
  • 1 teaspoon baking soda
  • ¼ cup sugar (for rolling)

 

Instructions
  • Cream butter, sugar, and lemon zest for a couple of minutes.
  • Add lemon juice and egg; beat to combine.
  • Gradually add in flour, salt, and baking soda.
  • Cover the bowl and refrigerate dough for 30-60 minutes.
  • Preheat the oven to 350 degrees Fahrenheit, and remove the dough from the fridge.
  • Place ¼ cup sugar in a bowl.
  • Using a small scoop to form balls, scoop dough out of bowl then roll in sugar until coated.
  • Place balls 2 inches apart onto cookie sheet.
  • Bake for 11-13 minutes or until the edges have a faint golden color.
  • Allow cookies to cool.
