Nana calls this recipe gumbo, but it is usually served as a side unlike the traditional gumbo. She made it recently with zucchini instead of okra, and it was still delicious. Have fun with this, and continue to share with your friends and family.  We also enjoy the chicken and sausage gumbo that Pa’s sister acquired while living in New Orleans.

 

    Ingredients
    • 8 ounces bacon, chopped
    • 1 tablespoon butter
    • 1 tablespoon olive oil
    • ½ teaspoon crushed garlic
    • 1 medium onion, chopped
    • ½ red bell pepper, chopped
    • 3 cups okra, sliced
    • 1 can diced tomatoes
    • 2 teaspoons dried basil
    • 2 – 15-ounce cans chicken broth
    • 1 teaspoon salt
    • ½ teaspoon pepper
    • 2 teaspoons sugar

     

    Instructions
    • In a skillet sauté your bacon.
    • Remove bacon and the grease from the skillet. Drain the bacon on paper towels.
    • Add butter and olive oil to the skillet, then add the onion, red bell pepper, and garlic. Sauté until soft.
    • Spread the okra out in a single layer on a cookie sheet and bake at 450 degrees Fahrenheit for about 6 minutes to prevent the okra from getting slimy.
    • Add your okra, diced tomatoes, basil, and chicken broth to skillet.
    • Mix in salt, pepper, and sugar.
    • Let simmer for 10-15 minutes.
