If Nana is making the menu, we’ll have a salad with our meal, so we have a variety.  This one is easy to prepare, and it can be done the night before, thus the name.  Just prep all the ingredients, but wait to dress it until you’re ready to serve.  This one is enjoyable for the slight tang and crispy iceberg lettuce, plus who doesn’t enjoy sweet peas?

 

Ingredients

Salad

  • ½ pound bacon
  • 1 head iceberg lettuce
  • 1 cup Swiss cheese
  • 3 green onions
  • 8 ounces frozen sweet petite peas

 

Dressing

  • ½ cup mayonnaise
  • ½ cup miracle whip
  • 1 tablespoon sugar
  • salt to taste
  • pepper to taste

 

Instructions

Salad

  • Chop bacon and cook. Remove from grease and cool on paper towel.
  • Cook peas according to package directions. Let cool.
  • Chop the iceberg lettuce into large bite-sized chunks. Add to salad bowl.
  • Cube the Swiss cheese to desired size, then add to lettuce.
  • Chop then add green onions.
  • Add cooled bacon and peas.

 

Dressing

  • Add all ingredients to a bowl and mix until smooth.
  • Dress the salad before serving.
