Nana loves growing greens and spinach, and we see this dish more often when her plants are doing well. It makes the spinach more palatable to those that don’t like spinach, and it gives Nana more variety in eating it. It would be excellent at breakfast, but she also serves it as a side for dinner.

 

Ingredients
  • 4 slices of bacon cut into bite size pieces
  • ½ cup onion, chopped
  • 1 teaspoon chopped garlic
  • 10 ounces fresh spinach, chopped
  • 4 eggs
  • pinch of nutmeg (optional)
  • 1 teaspoon of sugar
  • salt
  • pepper
  • ¼ cup grated Parmesan cheese

 

Instructions
  • Sauté bacon in skillet until crisp. Set aside.
  • Remove bacon grease except for 2 tablespoons.  Sauté onions in bacon grease until translucent.  When cooking the onion, add the garlic last minute. Add chopped spinach and sauté until wilted.
  • Beat eggs with a whisk.
  • Add optional nutmeg and sugar to the eggs and mix, then add to the spinach mixture.  Cook and stir until eggs are done.
  • Salt and pepper to taste.
  • Sprinkle with parmesan cheese.
