We can’t grow strawberries around here, but our fig trees are starting to make more and more each year.  Since we haven’t convinced Nana to make fig rolls (Fig Newtons), we’re enjoying this new treat.  It is delicious on buttermilk biscuits for breakfast or sweet dinner rolls later in the day.  We’re so thankful for another resource that God is providing for us.

 

Ingredients
  • 3 cups strawberries, sliced
  • 3 cups figs, stemmed and chopped
  • 3 tablespoons pectin
  • 2 cups sugar, divided
  • ¼ cup lemon juice

 

Instructions
  • Pulse the strawberries and figs in a food processor until they are the desired consistency.
  • Mix pectin with ¼ cup of sugar.  (Putting a little sugar in the pectin prevents clumping.)
  • Place the fruit and lemon juice in a small saucepan, then slowly add the pectin.
  • Bring the mixture to a full rolling boil over high heat, stirring constantly.
  • Add the remaining 1 ¾ cup of sugar and stir to dissolve.
  • Return the mixture to a boil. Continue to boil for one minute, stirring constantly.
  • Remove the pan from heat and fill jars.
