We can’t grow strawberries around here, but our fig trees are starting to make more and more each year.  Since we haven’t convinced Nana to make fig rolls (Fig Newtons), we’re enjoying this new treat.  It is delicious on buttermilk biscuits for breakfast or sweet dinner rolls later in the day.  We’re so thankful for another resource that God is providing for us.

 

Ingredients
  • 3 cups strawberries, sliced
  • 3 cups figs, stemmed and chopped
  • 2 cups sugar, divided
  • 3 tablespoons pectin
  • ¼ cup lemon juice

 

Instructions
  • Pulse the strawberries and figs in a food processor until they are the desired consistency.
  • Mix ¼ cup sugar with pectin. (Putting a little sugar in the pectin prevents clumping.)
  • Place the fruit and lemon juice in a small saucepan, then slowly add the pectin mixture and all of the sugar.
  • Bring the mixture to a full rolling boil over high heat, stirring constantly.
  • Add the remaining 1 ¾ cup of sugar and stir to dissolve.
  • Return the mixture to a boil. Continue to boil for one minute, stirring constantly.
  • Remove the pan from heat and fill jars leaving ¼-headspace.

 

If you want it to be shelf-stable, you can water bath.

  • Place a rack in the bottom of a stockpot and fill halfway with water. (Adding about ¼ cup of vinegar to the water bath will keep jars from developing a film on the outside.) 
  • Bring water to a boil and lower jars, 2” apart, into the boiling water using a jar holder. (Pour in more boiling water if necessary to bring the water level to at least 1” above the tops of the jars.)
  • Bring the water back to a rolling boil, cover the stockpot, and continue to boil for 10 minutes plus altitude recommendations.
  • Turn the heat off and let stand for 5 minutes.
  • Remove the jars from the pot and place onto a cloth-covered or wood surface several inches apart, and let cool for at least 24 hours.

 

We liked this picture to show you that batches of jams and jellies are not the same color.  We have different varieties of figs, and all fruit is not the same. Don’t worry about it.
