Who doesn’t love fried food?  Well, our family is thankful that Nana enjoys making fried okra. This is a great side for a meal, or a delicious bite-sized snack.  Follow Nana’s instructions so that the okra is ready to be fried at a moment’s notice.

 

Ingredients
  • 16 cups okra
  • 1 cup buttermilk
  • salt and pepper to taste
  • 1 cup flour
  • 1 cup cornmeal

 

Instructions
  • Pour buttermilk over sliced okra. Add salt and pepper; toss to cover.
  • Combine dry ingredients in a separate bowl.  Add okra to dry mix in small batches and coat evenly.
  • Spray baking sheet with nonstick cooking spray. Spread coated okra evenly onto baking sheet. Place in 500-degree Fahrenheit oven for ten minutes. Remove and let cool.
  • Skip to the last step if you are ready to fry and eat; otherwise, go to the next step for freezing instructions.
  • Place baking sheet into freezer. After frozen, place okra into plastic bags and return to freezer until ready to fry. Nana thinks it is better if fried frozen.
  • Fry in deep fryer at 360-degree Fahrenheit until brown.
