Coleslaw is a nice side for many meals, but Nana’s favorite is with fish tacos.  There is just something about a lightly dressed slaw that takes it to the next level.  It’s even more delicious when you’ve grown your own cabbage, green onions, carrots, and cilantro.

If you like fresh vegetables as much as Nana or you need to use some of your summer zucchini and tomatoes, try her Zucchini Caprese Salad with Dressing.  The fresh pesto and homemade dressing just tie it all together for a wonderfully healthy snack or beautiful side dish.




  • 2 tablespoons chopped cilantro
  • 4 green onions, chopped
  • 8 ounces shredded cabbage & carrots



  • 1 tablespoon lime juice
  • 3 tablespoons mayonnaise
  • ½ teaspoon fajita seasoning


  • Toss the salad ingredients in a mixing bowl.
  • Combine the mayonnaise, lime juice, and fajita seasoning and mix well.
  • Pour the dressing over the salad and toss to coat evenly.
  • Serve immediately to prevent wilting.
