Is this a main dish or a side? Yes, it is usually served as a side, but it has chicken, vegetables, and bacon, so it’s really a whole meal, right? Then add Nana’s garlic Asian sauce, yum!

We’ve served it with beef and broccoli, General Tso’s chicken, and sweet and sour chicken. Have fun and know that there’s a lot of precooking needed. Aunt Alisa may have even used a rotisserie chicken from the grocery store to help with prep time.

 

Ingredients

• 4 slices bacon
• 1 cup matchstick carrots
• 2 tablespoons vegetable oil
• 3 cups cold rice, cooked
• 2 – 0.74-ounce packets of fried rice seasoning mix
• 2 tablespoons soy sauce
• 3 eggs
• 1 pound chicken, cooked
• ½ cup frozen English peas

 

Instructions

Due to the size of this dish, Aunt Alisa usually uses an electric skillet, but you can use what works best for you.
• Cut bacon into small pieces and sauté in an electric skillet until brown. Set aside.
• In same pan, sauté carrots until tender. Set aside.
• Over high heat, add oil to skillet, and sauté rice for 1-2 minutes.
• Stir in seasoning mix and soy sauce.
• Push rice to the side of skillet. Add eggs, scramble, then stir into rice.
• Add back bacon and carrots. Add chicken and peas. Sauté 1-2 more minutes.
