Ingredients

Cookies

  • ¾ cup butter, softened
  • ½ cup sugar
  • ¼ cup brown sugar
  • ¼ cup apple sauce
  • ½ teaspoon cinnamon
  • 2 teaspoons vanilla
  • ½ teaspoon salt
  • 2 ¼ teaspoon baking powder
  • 2 ¼ cups flour

 

Caramel Icing

  • 3 tablespoons butter, softened
  • ¼ cup cream
  • ½ cup brown sugar
  • 1 teaspoon vanilla
  • 1 ¼ cups powdered sugar, separated

 

Instructions

Cookies

  • Preheat oven to 350 degrees Fahrenheit.
  • Lightly grease cookie sheet.
  • Cream your butter and both sugars.
  • Add and mix the remaining ingredients.
  • Refrigerate dough for at least 1 hour before placing on cookie sheet.
  • Scoop cookie dough about 2 tablespoons at a time and evenly space on the prepared cookie sheet.
  • Bake for 10-12 minutes.

 

Caramel Icing

  • In a medium saucepan, combine butter, cream, and brown sugar.
  • Heat over medium heat stirring constantly.
  • When it starts to boil, remove from heat then stir in vanilla and 1 cup of the powdered sugar until well blended.
  • Cool, then add remaining powdered sugar 1 tablespoon at a time until it is desired consistency.
  • Ice each cookie and allow to dry before stacking for storing.
