This is a favored recipe when we have extra eggs from our hens.  Nana will often serve deviled eggs when she is tired of having green salad but wants something light on the side.

  • 18 eggs
  • 2/3 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1-2 tablespoons onions, grated or chopped (optional)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2-1 teaspoon seasoned salt


  • Boil eggs. For a perfect boiled egg, cover eggs with water. Once water comes to a full boil, boil for 10 minutes.
  • Peel eggs
  • Cut in half lengthwise.
  • Remove the yolks, and place in a mixing bowl.
  • Add remaining ingredients to the yolks and blend with a fork or food processor.
  • Fill egg whites with yolk mixture using spoon or confectionary bag.
